This week we got a vegetarian box instead of the regular (omnivore) box! The meal selections looked so good that we couldn’t resist.  Hello Fresh is a meal kit subscription box where you’ll get the recipes and ingredients to make 3 meals for two (or 4) every week. Hello Fresh is a subscription, but you can pause your deliveries and choose alternate meals (at least for the Classic box). Hello Fresh recently redesigned their menu cards, and the instructions are super easy to follow.  It has nice illustrations, is clearly written, and even lets you know nutrition info, prep time, and which recipes are best to make first to optimize freshness of perishables.  Hello Fresh sends all the sauces, bouillon and such in individual serving packets or in off-the-shelf brand name packaging; although it means a little more packaging, they survive shipping better than the plastic cups used by Plated.

The dressing was versatile and went well with both the falafel and lettuce elements of the dish.  The falafel fried up crispy and delicious, but it had a tendency to disintegrate as it fried.  With a very gentle touch, they survived the cooking relatively intact and were very tasty.  The recipe presented an option to run the batter through a food processor — I forewent this to avoid the additional mess, but it may have helped the integrity of the patties.  The recipe brilliantly leverages some prepared hummus to add a balanced and “seasoned” taste to the canned chickpeas.

It took quite some time to get all the veggies sliced properly grilled and baked, but the end result was well worth it.  This recipe didn’t get me excited when I read the card, but when prepared, the sandwich had a great muffuletta feel to it and was quite satisfying.  Roasted Summer Vegetable Muffuletta with Garlic-Olive Aioli and Fresh Mozzarella cut open

The muffuletta is a truly grand sandwich — it was too substantial to photograph on our standard photo plate, which comfortably holds most dishes served family-style!  The sandwich held together much better than expected, and it was actually quite easy to eat.  The huge bread did need a little more mayo than was provided (for full coverage — the sandwich was moist enough, though).  This colossal sandwich also goes great with a little added bacon, if you are not strictly vegetarian.

This was highly-anticipated, and it did not disappoint.  The collard-lima-corn base kept the bread moist and added a surprising sweetness to the dish.  This dish can either stand on its own or serves as a great side too!  We served it up alongside some Raw Spice Bar seasoned ribs for an awesome Southern-style feast!

The veggie box is great for a change of pace, even if you are a carnivore.  I absolutely loved the three selections, despite my near-pathological compulsion to add pork to everything.  The dishes really held their own and were satisfying.  Each dish was easy to make — any of the three would be a great second dish to make if you had to feed vegetarian guests and didn’t have an impressive meatless dish in your entertaining arsenal.  Next week’s veggie selections are a little more traditional, offering some hearty pasta and salads.

You can click on each dish and get the recipe information, including calories, ingredients, and difficulty levels.  We like having this info available beforehand, as it allows us to avoid meals that we think are too involved or require to much time for our schedule that week.  Although the names of the dishes are fairly lengthy and descriptive, it is also nice to have the ingredient list to get a fuller picture of the dish and to get the tastebuds psyched.
